We’re kicking off the year 2026 at Monte Bú with a feast of game dishes. Look forward to a menu that brings together the very best from Czech forests and the North American wilderness, all perfectly balanced in flavor and crafted with absolute precision.
You’ll start with a delicate venison carpaccio served with truffle aioli, Durgali sheep cheese, and pickled mushrooms that add just the right hint of forest aroma.
Next comes a rich game goulash soup with juniper, spruce oil, and marjoram. A bowl that will warm you up even on the coldest January days.
For the main course, you can choose wild boar schnitzels marinated in garlic, fried in clarified butter, and served with mashed potatoes and charred lemon.
Or will you go for something more exotic? The Buffalo Fillet Mignon from true Canadian bison tenderloin will impress you with its tenderness and bold flavor. As sides, you’ll enjoy a trio of Jerusalem artichoke, sweet potato with smoked cream, Canadian cranberries — and to make it properly Canadian, a touch of maple syrup.
