Seafood Weeks return to Monte Bú in 2025. So if you've been waiting all year to discover what new and surprising flavor combinations we’ve come up with, the time has come.
Start with a delicate salmon and tuna mosaic served with wakame seaweed, a fresh yuzu gel, crunchy herb baguette, and a hint of heat from tropaeolum flowers. Looking for something more traditional? Our Tom Kha Gai fish soup is a rich take on the Thai classic, blending tender rockfish with coconut milk, ginger, lime leaves, lemongrass, chili, and cilantro. The result is a bowl full of depth and warmth.
For the main course, we focused on top-quality ingredients. The roasted Oman swordfish with an onion and nut crust comes with a smooth artichoke cream, fresh salad tossed in lime dressing, and a hint of chive oil. A dish that’s elegant and bold all at once. We’ve also prepared the famous Cacciucco alla Livornese – a hearty Tuscan seafood stew with roots in the port town of Livorno. Originally made from unsold fish at the end of market day, our version is anything but leftovers. Expect a generous portion of musky octopus, Norway lobster, shrimp, mussels, calamari, cuttlefish, and gilthead bream, simmered with tomatoes, capers, and root vegetables, and served with a garlic baguette.
And for something truly exceptional, try the pappardelle with white sturgeon. The combination of handmade pasta, sturgeon fillet, butter, garlic, olive oil, parsley, and a touch of chili. Sturgeon is rare to find on Czech menus – which is all the more reason to enjoy it with us.
